Belgian Waffles with Crispy Bacon and Maple Syrup

Gorgeous, Gourmet and Gluten-Free
A tantalising stack of scrumptious, home-made Belgian waffles, topped with strips of succulent crispy bacon, all dripping with luscious maple syrup. A real treat – and all gluten free. We can’t wait for the weekend and the time to lounge in bed with this brilliant Breakfast in Bed. Congratulations to Vicki, the Free From Fairy. Vicki says she spends hours in her kitchen experimenting with food to create exciting, healthy, free-from recipes. Well, she certainly came up with a winner here.
Ingredients
- 2 medium free range eggs, separated
- 220 ml milk (dairy or dairy-free)
- 60 g butter or dairy-free margarine, melted
- 1 tsp vanilla extract
- 170 g Free From Fairy gluten-free self-raising flour
- 20 g sugar
- 12 rashers streaky bacon cooked until crispy
- Maple syrup
Method
- Switch on your waffle machine
- Place the egg yolks in one bowl and the whites in another
- Add the milk, melted butter and vanilla to the egg yolks and beat until well combined
- Slowly add the flour to create a smooth batter, then add the sugar
- Beat the egg whites with an electric whisk until you have stiff peaks
- Gently fold the egg whites into the batter mixture
- Ladle the batter into your waffle maker and cook
- While the waffles are cooking, fry the bacon until crisp
- Once ready to serve, cut the bacon into pieces using scissors, scatter on top of the waffles and drizzle with maple syrup
A Fairytale Breakfast in a Fairytale Bed
Vicki was also asked which of our superb luxury beds she would choose to eat her breakfast in (assuming that there was no need to rush off to work, to the gym or to do the school run). She decided that this fabulous Italian four poster bed reminded her of books she read as a child, her wedding night, and the delicious idea that she could just hide in there and nobody would know. Definitely the bed for her – a fairytale bed for the Free From Fairy. It’s one of our favourites too.
